Chicken Bhuna – Dry Roasted Chicken in Thick Sauce

chicken sookha

I wanted to share with you my favorite chicken dish – Chicken BhunaBhuna means dry-roasted or roasted without or very less water. The spice mixture and chicken are cooked on low heat until the chicken is tender and succulent. The slow cooking enhances the flavor of this dish and the aroma while it is cooking is simply irresistible. I like to marinate and then sear the meat before adding them into the spice mixture or masala. This adds another layer of flavor to this dish. You can try this recipe with lamb or goat and it comes out really good!! Once you try it, I am sure you will fall in love with this recipe!
