Spiced Carrot Walnut Bread

Breakfast breads are a family favorite in our house, with banana bread being on top of the list. This is a great way to add veggies and fruits in our diets. I make sure these breads are packed with nutrition by using healthy ingredients without compromising on the deliciousness!

Have you tried my Flaxseed Banana Bread recipe yet? This is a fan favorite! Check out the video below!

I buy carrots in bulk, grate and freeze them so whenever I crave for some Carrot Halwa, Muffins or Bread, I just thaw and use.

My Spiced Carrot Walnut Bread is super moist and very hearty…. goes really well with your morning coffee! I love mine with some Kerrygold Irish butter – OH SO YUM!!

Let’s check out the recipe and happy cooking!

Recipe                                             Makes: 1 loaf                  Time: 1 hour 30 minutes

Ingredients

  • 2 cups whole wheat flour
  • ½ cup dark brown sugar (I like my bread less sweet, you can use ¾ cup)
  • 1 stick unsalted butter, room temperature
  • 1 Tbsp. Maple syrup
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. salt
  • ½ cup Greek yogurt
  • ¼ cup milk
  • 2 eggs
  • 1.5 tsp. pure vanilla extract
  • ½ tsp. ginger powder
  • ½ tsp. cinnamon powder
  • ¼ tsp. cardamom powder
  • ¼ tsp. nutmeg powder
  • 2 cups grated carrots
  • ½ cup walnuts (you can use pecans or raisins)
  • ¼ cup mini chocolate chips (optional)

Method

  1. Heat the oven to 350F (175C). Grease a 9 x 5-inch loaf pan with butter or spray. You can line it with a parchment paper and spray the paper.
  2. Mix all of the dry ingredients in a bowl.
  3. Beat together butter and sugar in a different bowl until mixture turns smooth and combines well.
  4. Add eggs and mix well.
  5. Add milk, vanilla extract, maple syrup and yogurt and mix.
  6. Add the dry ingredients. Mix them together gently, trying not to over mix.
  7. Fold in the carrots, walnuts and chocolate chips.
  8. Pour the batter into the loaf pan.
  9. Bake for about 55-60 minutes, or until the bread is golden brown and a fork inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes.
  11. Take out the bread carefully and cool on a rack for about 15-20 minutes before slicing.
