I buy carrots in bulk, grate and freeze them so whenever I crave for some Carrot Halwa, Muffins or Bread, I just thaw and use.
My Spiced Carrot Walnut Bread is super moist and very hearty…. goes really well with your morning coffee! I love mine with some Kerrygold Irish butter – OH SO YUM!!

Recipe Makes: 1 loaf Time: 1 hour 30 minutes
Ingredients
- 2 cups whole wheat flour
- ½ cup dark brown sugar (I like my bread less sweet, you can use ¾ cup)
- 1 stick unsalted butter, room temperature
- 1 Tbsp. Maple syrup
- 1 tsp. baking soda
- ½ tsp. baking powder
- 1 tsp. salt
- ½ cup Greek yogurt
- ¼ cup milk
- 2 eggs
- 1.5 tsp. pure vanilla extract
- ½ tsp. ginger powder
- ½ tsp. cinnamon powder
- ¼ tsp. cardamom powder
- ¼ tsp. nutmeg powder
- 2 cups grated carrots
- ½ cup walnuts (you can use pecans or raisins)
- ¼ cup mini chocolate chips (optional)

Method
- Heat the oven to 350F (175C). Grease a 9 x 5-inch loaf pan with butter or spray. You can line it with a parchment paper and spray the paper.
- Mix all of the dry ingredients in a bowl.
- Beat together butter and sugar in a different bowl until mixture turns smooth and combines well.
- Add eggs and mix well.
- Add milk, vanilla extract, maple syrup and yogurt and mix.
- Add the dry ingredients. Mix them together gently, trying not to over mix.
- Fold in the carrots, walnuts and chocolate chips.
- Pour the batter into the loaf pan.
- Bake for about 55-60 minutes, or until the bread is golden brown and a fork inserted into the center comes out clean.
- Cool in the pan for 10 minutes.
- Take out the bread carefully and cool on a rack for about 15-20 minutes before slicing.
