Banana bread is a favorite in my house especially with my daughter who eats it for breakfast every morning. I have played around with several different ingredients and have come to one that is my all time favorite. I love banana nut bread but my daughters are allergic to nuts so I add flax meal to give it the depth and nuttiness. This is an easy, yeast-free bread which comes out really moist and flavorful.
Ingredients:
Whole wheat flour – 1 cup
All-purpose flour -1/2 cup
Ground flaxseed or flaxseed meal – 1/4 cup
Baking powder – 1tsp
Baking soda -1tsp
Salt -1tsp
Eggs -2
Butter -1 stick or 8tbsp
Brown sugar -1cup
Ripe bananas -3 mashed
Cinnamon powder -1tsp
Pure vanilla extract – 1tsp

Method:
Combine the dry ingredients -flour, salt, baking powder, baking soda and salt in a bowl.
In another bowl, mix butter in room temperature and sugar with a hand mixer. Add eggs, mashed bananas, cinnamon powder and vanilla extract to it. Mix well. Add dry ingredients to it and mix gently till the batter comes together. Pour the batter in greased bundt pan and bake in a 350deg preheated oven for about 45 minutes. You can use a bread loaf pan as well. I prefer bundt pan as it cooks properly from all sides and looks pretty:) Cool completely and enjoy. I love to eat warm with some honey butter!!
Note: Please keep checking after 40 minutes as oven settings may vary.

I just made these in muffin version (about 30-32 min at 350°) and threw in a cup of chocolate chips to add to the unhealthy factor. Delicious!
